Crisp light pastry tart with mustard filling and a lovely sweet but tangy pickle curd and a dill ice cream
Ingredients
Bread and Butter Pickle Curd
Mustard Seed Tart Shell
Dill Ice Cream
Bread and Butter Pickle Gastrique
Fresh Cucumber Garnish
Instructions
Fill tart shell with pickle curd.
Serve with scoops of dill ice cream.
Drizzle gastrique around plate and over ice cream.
Garnish with fresh cucumber slices or brunoise.
Optional: microgreens or dill fronds for color.
