Ingredients

CANNOLI SHELLS
2 cups all-purpose flour
2 tbsp sugar
1/2 tsp salt
2 tbsp butter, cold and cubed
1 egg yolk
1/2 cup white wine (ideally marsala)
Oil for frying
4 oz golden chocolate, melted

CHOCOLATE VEGAN CASHEW RICOTTA
1 1/2 cups raw cashews, soaked 4 hours
1/2 cup coconut cream
1/3 cup powdered sugar
1/4 cup cocoa powder
1 tsp vanilla extract
Pinch of salt

WHISKY RASPBERRY COULIS
1 cup fresh raspberries
3 tbsp sugar
2 tbsp whisky
1 tsp lemon juice

GARNISH
1/2 cup pistachios, finely chopped

Instructions

Make shells: Mix flour, sugar, and salt. Cut in butter, add egg yolk and wine. Knead until smooth. Rest 30 minutes. Roll thin, cut into circles, wrap around cannoli tubes, and fry until golden.
Make filling: Blend drained cashews with coconut cream, powdered sugar, cocoa, vanilla, and salt until smooth and creamy.
Make coulis: Simmer raspberries, sugar, whiskey, and lemon juice until thickened. Strain if desired.
Assemble: Dip cooled shells in melted chocolate, sprinkle with pistachios. Fill with chocolate cashew ricotta and drizzle with coulis.
