A fusion of British pastry tradition with Chinese dim sum flavors

Ingredients

PASTRY
450g store-bought puff pastry (2 sheets), thawed
1 teaspoon Chinese five-spice powder
1 beaten egg (for glazing)
2 tablespoons sesame seeds

FILLING
370g ground pork
180g raw shrimp, peeled and finely chopped
2½ teaspoons granulated sugar
2 teaspoons fish sauce
1 teaspoon ground ginger
10g organic portabella mushroom powder

Instructions

PASTRY
Preheat oven to 400°F (200°C).
Season the pastry: Unroll the puff pastry sheets and lightly dust each sheet with the five-spice powder, gently pressing it into the surface with your hands or a rolling pin.

FILLING
Combine ingredients: In a large bowl, mix together the ground pork, chopped shrimp, sugar, fish sauce, ground ginger and mushroom powder. Mix thoroughly with your hands until well combined and slightly sticky.

Test seasoning: Cook a small spoonful of the mixture in a pan to taste and adjust seasoning if needed.

ASSEMBLY
Shape the filling: Divide the filling in half. On each pastry sheet, form the filling into a log shape about 2 inches from one long edge, running the length of the pastry.

Roll the pastry: Brush the far edge of each pastry sheet with beaten egg. Roll the pastry over the filling, starting from the edge closest to the filling. Press gently to seal, ensuring the seam is on the bottom.

Cut into portions: Using a sharp knife, cut each long roll into individual sausage rolls about 1½ inches long. You should get 12-14 pieces total.

FINISH AND BAKE
Prepare for baking: Place the rolls seam-side down on a parchment-lined baking sheet, leaving space between each roll.

Glaze and garnish: Brush the tops with beaten egg and sprinkle generously with sesame seeds.
Bake: Cook for 25 minutes, turning the baking sheet halfway through, until the pastry is golden brown and crispy.

Rest: Allow to cool for 5 minutes before serving.

SERVING SUGGESTIONS
* Serve warm with sweet chili sauce or Chinese black vinegar for dipping
* Perfect as an appetizer or part of a dim sum spread
* Can be made ahead and reheated in a 350°F oven for 5-7 minutes

NOTES
The five-spice should be evenly distributed but not overwhelming.
Don't overfill the pastry or it may burst during baking.
These freeze well before baking - add 5 extra minutes to cooking time if baking from frozen.
