Kalamata Caramel Glaze

For Top Chef Season 22, we saw Zubair and Bailey use this glaze for a winning dish with octopus. We have experimented with different meats and find it to be hugely successful with chunks of lamb, kebab style.

Ingredients
1 cup caster sugar 140 g Kalamata Olives 4 cloves black garlic 2 tbsp hot honey 4 tbsp fish sauce
Method
First, put the sugar into a cast iron skillet over low heat and leave it alone while the caramel forms around the edge. Swirl the pan (try to avoid stirring) until all the sugar caramelizes.
While the sugar heats, put all the remaining ingredients into a blender and pulse. Pour in the caramel and continue to blend until the glaze is only a little pulpy.
Often, our recipes are complicated, to achieve "television ready" dishes. If you would like a version you can easily make at home, please just ask.
