Whipped Bone Marrow Butter

Preheat oven to 400°F.
Season bone marrow bones with salt and pepper and roast in the oven for 20-30 minutes.
While the bones are roasting, cook the garlic gently in the olive oil and duck fat.
Scoop roasted marrow from bones and blend with oil, duck fat, garlic, and butter.
Whisk on medium-high speed until smooth and fully incorporated. Season to taste with salt and pepper.
Refrigerate and then return to room temperature to serve.
