Cornish Game Hen with Prune and Corn Stuffing

Cornish game hens have a milder, more delicate flavor than chicken. They are very tender and juicy and are perfectly sized to give to a guest as a single serving. They look elegant on the plate.

The Cornish game hen deserves the fanfare of unusual pairing and this recipe, which combines pickled prunes, soft bread and sweet corn, is the ideal combination of sweet, salty and acidic.

Substitutions and Additions

While developing this recipe, I experimented with different birds. The stuffing is perfect with either turkey or chicken.

I also tried using wholegrain bready, but it made the stuffing less 'melt in the mouth'. I also tested it with croissants (in case you've bought some in, perhaps for Thanksgiving breakfast, and have some that are left over and in danger of going stale.  The buttery addition is lovely.

 

You can add more prunes if you love the acid kick. You can use finely diced carrots in place of sweetcorn if you want to, but make sure that you're using good young sweet carrots.
