Black Cod: A Forgiving Fatty Fish

Black Cod: A Forgiving Fatty Fish
Black cod, also known as sablefish, is one of the fattiest fish available, and this richness makes it exceptionally forgiving to cook at home. Its high fat content keeps it moist and tender even if slightly overcooked, making it a safer choice than leaner fish for beginners. The belly section is even fattier than the loin and is ideal for slow poaching in a warm broth, where it takes on surrounding flavors beautifully. The loin, being firmer, holds up well to pan-searing with a crispy skin. Black cod pairs particularly well with bold, salty marinades like miso, soy, or sardine-based sauces, which cut through its natural richness.
