Butternut Squash Fondant

Butternut Squash Fondant

A fondant is a technique where a vegetable (traditionally potato) is cut into a neat cylinder or block, seared until golden on both sides, then slowly braised in generous amounts of butter and stock until completely tender. As Monica described, the fondant 'should be like butter when you cut through it.' For butternut squash, this means peeling, cutting into uniform shapes, browning in a hot pan, then transferring to an oven dish with butter, stock, and aromatics. Cook low and slow until a knife passes through with zero resistance. Marcus praised Charlie's fondant as 'buttery and delicious,' making it one of the strongest elements on his plate.
