Chasseur Sauce

Chasseur, French for hunter, is a classic sauce named for the ingredients a hunter might find in the wild: mushrooms, shallots, herbs, and wine or cognac. It begins with a fond built from sauteed shallots and mushrooms, deglazed with white wine or brandy, then enriched with stock and finished with mustard and fresh herbs such as tarragon or thyme. The sauce is deeply savory with a complex sweetness from the caramelized mushrooms, lifted by the brightness of the wine. It pairs naturally with pork, chicken, rabbit, or game meats. The mustard finish cuts the richness and ties the boozy element together without overpowering it.
