A perfect cheesecake is ready when the center has just a slight wobble when gently shaken. The edges should be set and slightly pulling away from the sides, but the middle should still jiggle slightly. Overbaking causes cracks and dry texture, while underbaking results in a cheesecake that falls apart when sliced. Timing and observation are key to success.
