Cranachan: Scotland's Celebrated Dessert. Cranachan is a traditional Scottish dessert celebrating the raspberry harvest, combining five essential elements: cream, whisky, heather honey, toasted oats, and fresh raspberries. Its origins lie in an older dish called crowdie, where crowdie cheese was mixed with oatmeal and cream. Modern cranachan layers these simple ingredients into what has been called the uncontested king of Scottish desserts. The whisky choice matters — avoid heavily peated or smoky varieties like Laphroaig or Lagavulin, which overpower the delicate cream and fruit. Instead, choose smooth honeyed Scotch such as Dalwhinnie or Glenkinchie, or use Drambuie (a whisky-based liqueur with heather honey) for a rounder, sweeter flavour. When incorporating cranachan into other desserts, the elements can be distributed across components: Gary Maclean's genius was placing the oats in the crumble and the whisky, honey, and raspberry in the cream, so that every bite of the complete dish potentially hits all five elements simultaneously. The raspberries should be crushed rather than puréed — maintaining some whole pieces creates a marbled, rippled effect through the cream that is both visually beautiful and texturally interesting.
