Drizzle Icing with a Fork

A fork drizzle produces the visual effect of decorative icing without piping equipment. The consistency of the glaze is everything: too thick and it clumps or breaks; too thin and it runs flat and loses definition. Aim for a glaze that flows slowly and steadily off the fork tines when lifted — similar in consistency to single cream. Build up to the right consistency by adding liquid one drop at a time; it is easy to thin but difficult to recover once over-diluted. To drizzle, dip a fork generously into the glaze and move it in a quick continuous zigzag motion over the biscuits — work from one end to the other without stopping mid-pass. Let the glaze set completely, at least 20 minutes, before stacking or wrapping; otherwise the drizzle smears.
