Drying Mozzarella

Fresh mozzarella carries a lot of water, and that water is what makes a fried sandwich leak and turn soggy from the inside. Slice the mozzarella ahead of time and pat it very dry, even resting it on kitchen paper for a few minutes before it goes into the build. A drier cheese melts to a clean pull rather than weeping liquid through the crust, so the crumb stays crisp.
