Enhancing Subtle Fruit Flavors

Some fruits like pears don't have very strong flavors on their own. To enhance them, consider poaching the fruit in wine or other flavored liquids before incorporating into your cake. The poaching liquid infuses the fruit with additional flavor that comes through in the finished bake. However, be aware that heating certain fruits like passion fruit can cause them to lose intensity and become less pronounced. When using delicate flavors, consider whether heating will enhance or diminish them, and adjust your technique accordingly.
