Fresno Peppers

Fresno peppers are bright red, medium-heat chilies that look very similar to jalapenos but are slightly milder and have a fruitier, sweeter flavor. Named after Fresno, California, they are available fresh in most supermarkets and work beautifully raw, roasted, or charred. Because their skin is thinner than a jalapeno, they blister quickly on a grill or open flame, developing a lovely smoky sweetness. Use them sliced raw in salsas, blended into sauces, or pressed on a hot pan to make a punchy chili crisp. When a recipe calls for a fresh red chili with moderate heat and fruity brightness, Fresno peppers are an excellent and accessible home kitchen choice.
