Game Chips

Game chips are wafer-thin, deep-fried potato crisps that are a traditional British garnish for roast game birds and poultry. They are made by slicing potatoes as thinly as possible - ideally on a mandoline - then frying them in hot oil until crisp and golden. Unlike thick chips or wedges, game chips provide textural contrast to soft roasted meat and rich sauce without adding bulk. Matthew Ryle chose them specifically for this dish as they are classically appropriate and quick to cook in a 20-minute skills test. They should be seasoned immediately after frying while still hot so the salt adheres properly.
