Hatch Peppers

Hatch peppers are a variety of New Mexican green chile grown in the Hatch Valley of New Mexico, available fresh only during a short late-summer window, typically August to early September. Their heat ranges from mild to medium-hot depending on the cultivar and the specific growing conditions of that year's crop. They are prized for a distinctive earthy, slightly smoky flavour that intensifies significantly with roasting. Outside of their season, roasted Anaheim or poblano peppers offer the closest flavour profile. Hatch peppers are versatile across multiple preparations in a single dish — as solids stirred into fillings, blended into sauces or mayonnaise, and as a plated puree.
