Mark's "Tropical Snowman" Smash Cake

Mark made rum and ginger cake, laced with lime Italian Meringue buttercream and topped with snowmen made of meringue kisses, hidden by a white chocolate globe looking like a snowman's face.


Mark used a silicon mould for his dome, He said "it makes it really easy to get the chocolate out whole, once it has set."


During judging, Paul Hollywood suggested that the cake needed a lot more lime in the buttercream to balance the 'big-hitting' ginger. The cake was deemed 'lovely' and the chocolate dome smashed exactly as desired.
