Masa Harina

Masa harina is a finely ground flour made from nixtamalized corn, the same base used to make corn tortillas and tamales. When used as part of a breading mix, often combined with potato starch or all-purpose flour, it adds a distinct corn flavor and produces a crust with a denser, crunchier texture than flour alone. The nixtamalization process also adds a subtle mineral quality that enhances the overall complexity of the crust. Masa harina browns well at frying temperature and holds up to bold sauces without becoming immediately soggy. It is an excellent way to bring a Latin flavor dimension to fried proteins like turkey, chicken, or pork cutlets.
