Moqueca

Moqueca is a Brazilian seafood stew with roots in the coastal regions of Bahia and Espirito Santo. At its core is a slowly simmered base of peppers, onions, tomatoes and garlic, built into a fragrant sauce with fresh lime juice, coriander, and traditionally palm oil or coconut milk. The fish is added right at the end to keep it just cooked and tender. Home cooks can build huge flavour by slow-sweating the pepper base first, using fish bones or shellfish shells to make a quick stock, and finishing with fresh herbs and plenty of citrus. It is a dish that rewards patience in the base and a light hand when the fish finally goes in.
