Never Twist the Cutter

The single most common reason vol-au-vents fail to rise evenly is twisting the cutter during cutting. When you twist, the rotating edge compresses and seals the exposed layers of laminated dough, preventing them from separating during baking. The result is lopsided, stunted pastry that rises unevenly or not at all. Instead, press the cutter straight down in one firm, clean motion and lift it cleanly away. Use a sharp cutter - dull edges also compress layers. Paul Hollywood praised Syabira's vol-au-vents for their 'nice height' and noted she had 'trapped the butter inside' to achieve rise without visible lamination on the outside. This clean cutting technique, combined with proper chilling before baking, is what produces the dramatic, even puff that distinguishes professional vol-au-vents from flat, disappointing ones.
