Oil poaching is a gentle technique that works especially well for proteins with very little fat, such as venison tenderloin. The process involves submerging the meat in warm, herb-infused oil at a controlled low temperature. Unlike grilling or searing, oil poaching surrounds the protein with even, consistent heat, reducing the risk of overcooking. The key is to bring the oil up to temperature and then turn off the heat, letting residual warmth finish the cook. Aromatics such as sage, rosemary, porcini mushrooms, and black garlic added to the oil build flavor into the meat as it poaches. The result is tender, evenly cooked protein with a subtle earthy depth.
