Pangratata

Pangratata is Italian toasted breadcrumbs, sometimes called poor man's parmesan because it adds texture and savoury depth without the cost of cheese. Made from stale sourdough or country bread pulsed into coarse crumbs, then toasted slowly in olive oil with a pinch of salt, lemon zest, garlic or chilli, it transforms humble ingredients. Scatter it over pasta, roasted vegetables or soft braised greens for instant contrast and crunch. For a refined touch, as seen with braised carrots rolled in pangratata, coat cooked vegetables in the crumbs just before plating so each bite delivers crispness. Store cooled pangratata in an airtight jar for up to a week.
