Pickling Shellfish in Cool Brine

When pickling delicate seafood like mussels, the temperature of your brine matters enormously. Pouring boiling pickle liquor directly over mussels will toughen and shrink them, leaving a gummy, chewy texture. Callum's approach was to cook the brine (vinegar, sugar, aromatics) to dissolve everything, then cool it completely before adding the shelled mussels. The cool bath allows the mussels to absorb flavour gradually without further cooking, keeping them plump and tender. The same principle applies to other soft items like peeled tomatoes, soft herbs, or lightly poached shellfish. Cool brine preserves texture. Hot brine destroys it.
