Pithivier

A pithivier is a classic French pie made from two discs of puff pastry sealed around a rich filling and decorated with a distinctive spiralling pattern cut or scored into the top. Traditionally filled with almond cream, savoury versions have become a showcase preparation, layered with game, mushrooms, or, in modern kitchens, spiced fillings like aloo gobi. The pastry needs to be properly chilled before baking to get a sharp rise and crisp layers. Home cooks should brush the top with egg wash for a deep glossy finish and bake at high heat initially. Watch carefully so the bottom cooks through without the top burning.
