Pomegranate molasses is a thick, dark syrup made from reduced pomegranate juice that is a staple in Middle Eastern cooking. It delivers intense sweetness and sharp acidity simultaneously, which makes it a powerful ingredient that must be used with care. When making a jus or sauce with pomegranate molasses, taste it on its own first. It can seem overwhelmingly sweet and intense in isolation, but when combined with rich meats like lamb, the sweetness softens and the acidity cuts through the fat beautifully. Start with a small amount and build up, as a little goes a long way. It pairs exceptionally well with lamb, aubergine, and other robust Mediterranean and Lebanese flavours.
