Quick Cheats Ice Cream with Frozen Fruit
When time is short, a quick cheats ice cream can be made by blending frozen fruit directly with a small amount of cream. The key is restraint with the cream — frozen peaches are naturally slightly creamy when blended, so too much cream dilutes the fruit flavour and creates something that tastes like cream rather than peach. Blend only briefly; over-blending generates heat which melts the mixture. Get it back into the freezer immediately after blending. This technique works with most frozen fruits and produces a sorbet-ice cream hybrid with intense fruit flavour. It will never be as smooth as churned ice cream but delivers excellent results under time pressure.
