Quick Cider Reduction

A traditional gastrique needs a blender, a fine-mesh sieve and a squeeze bottle. For a home version that delivers the same sweet-tart, glossy drizzle, combine apple cider, apple cider vinegar, a touch of brown sugar and a pinch of salt in a small saucepan. Simmer gently for 12-15 minutes until reduced by about three-quarters - it should look lightly syrupy and coat the back of a spoon (it will thicken further as it cools). The smaller the pan, the more controlled the reduction. Use it to drizzle around plated dishes wherever you'd reach for an apple gastric, balsamic glaze or fruit reduction.
