Royal Icing Flooding Technique

Professional-looking flooded icing requires two consistencies: thick for outlining and thinner for flooding. Outline shapes first with piping consistency icing, then flood centers with honey-consistency icing using squeeze bottle or spoon. Work quickly as icing skins over rapidly. Use toothpick to guide icing into corners and eliminate air bubbles for smooth finish.
