Salsa Macha

Salsa macha is a rich Mexican condiment made by toasting nuts, seeds, and dried chilies in oil, then blending them with acid and more oil into a coarse, flavourful paste. Traditional recipes roast the nuts and seeds in a dry pan, but dropping them straight into a deep fryer achieves the same toasted depth of flavour in a fraction of the time. Common chilies include morita, ancho, and guajillo, each contributing smoky, fruity, or earthy notes. A splash of red wine vinegar and a glug of good olive oil balance the richness. Salsa macha keeps well in the fridge for weeks and works beautifully as a condiment, marinade, or finishing sauce for grilled fish, meat, or vegetables.
