Silicone Mats vs Parchment Paper

Many professional bakers prefer silicone baking mats for Swiss rolls over traditional parchment paper, and there are compelling reasons for this choice. 


Silicone mats provide superior non-stick properties without needing additional greasing, ensuring delicate sponges release cleanly without tearing. They conduct heat more evenly than parchment, reducing hot spots that can cause uneven browning or cracking. The flat, stable surface prevents the bunching or shifting that can occur with parchment paper during baking. 


However, parchment paper offers advantages too: it's disposable, eliminating cleanup, and some bakers find it easier to roll the warm sponge using parchment as a guide. Parchment also allows for easier transfer when making multiple batches. The choice often comes down to personal preference and available equipment, though silicone mats generally produce more consistent professional results.
