Smashing Chicken Thighs

Smashing a chicken thigh, whether with a heavy pan, a meat mallet, or a tortilla press, flattens the uneven surface to create uniform thickness throughout. This solves one of the most common problems with irregularly shaped thighs: the thicker end takes far longer to cook through than the thinner edge, leading to uneven results. A smashed thigh has maximum surface contact with the pan or fryer, producing a consistent golden crust and a shorter total cook time. The tortilla press is particularly efficient, applying even, flat pressure across the entire surface without tearing the meat. It is a quick, inexpensive tool well worth keeping in a home kitchen.
