Fondant fancy sponges are delicate and require precise oven control. Too high a temperature creates a hard crust before the interior sets, leading to the cardboard texture judges criticized. Start at 180°C but monitor constantly - reduce to 170°C if browning too quickly. The center should spring back when lightly touched. Some bakers needed to increase temperature when centers remained uncooked, but this risks overbaking the edges. Professional tip: use an oven thermometer as many home ovens run hot or cold.
