A wet grinder is a traditional South Indian kitchen appliance used to grind soaked grains, lentils, and spices into exceptionally smooth batters and pastes. Unlike a high-speed blender, a wet grinder works by rolling heavy stone or granite drums over ingredients in a circular basin, producing aerated batters with a texture that blenders cannot fully replicate. This is the secret behind the light, fermented batters used for idli and dosa. In the professional kitchen, a wet grinder can also pulverize spices and create fine purees from dense vegetables. The slow grinding action breaks down cell walls more thoroughly, releasing flavors and creating a silkier result than blades alone.
