Timing Upside Down Cakes

Oven timing is critical when making upside down cakes. One or two minutes can mean the difference between a burnt fruit topping or a liquid underdone sponge. The challenge is cooking the sponge enough so it's not dry while ensuring the fruit is properly cooked. Bakers need to factor in not just enough time for their cakes to bake, but also for the delicate process of turning out. Monitor the cake's shake in the middle - when it stops shaking, it's ready. Don't want it to collapse when turning it out.
