Two-Temperature Baking Method

Some experienced bakers use a two-stage temperature method for Madeira cakes: start at a higher temperature (around 180°C) for 10 minutes to encourage dome formation and cracking, then reduce to a lower temperature (around 160°C) to cook through evenly. This technique helps achieve the classic Madeira characteristics while preventing over-browning or uneven cooking throughout the cake.
