Basque cheesecake originated from the Basque region in Spain around the early 1990s and represents a modern classic in the dessert world.
Unlike traditional New York cheesecake which is quite heavy and dense. Basque style cheesecake is remarkably light in texture. It achieves a unique consistency that falls somewhere between a very rich set custard and a very light sponge cake. The hallmark characteristics include a burnished deeply caramelized top and a silky smooth creamy center that has an almost jelly-like wobble when properly baked.
