Understanding Cauliflower Mushrooms

Despite the name, cauliflower mushrooms are not related to cauliflower at all. They are a wild fungus with a ruffled, cream colored body that resembles a brain or a head of egg noodles more than their namesake vegetable. The flavor is mild, gently nutty, and slightly earthy, making them a friendly introduction to wild mushrooms for anyone nervous about stronger varieties. Rinse them well to remove debris trapped in the folds, then saute in butter, add to pasta, or tempura fry for a crispy bite. They hold their texture well when cooked and take on seasoning beautifully without getting slimy.
