Understanding Gochugaru
Gochugaru is a coarsely ground Korean red pepper that provides a distinctive fruity heat quite different from standard chilli powder. It has a slightly sweet, smoky character with moderate spiciness, making it ideal for seasoning without overwhelming other flavours. Available in fine and coarse grinds, the coarse version is traditionally used for making kimchi while the fine grind works better in sauces and seasonings. When using gochugaru in a dumpling filling, add it during cooking to bloom the spice and release its full flavour. Store gochugaru in an airtight container in the freezer to preserve its vibrant red colour and fresh, fruity taste for longer.
