Understanding Pepián Sauce

Pepián is a traditional Guatemalan sauce that shares DNA with Spanish romesco but takes on its own distinct character. The base combines roasted bell peppers, tomatoes, garlic and paprika, but what sets pepián apart is a generous quantity of ground almonds or other nuts, which give it a rich, thick, nutty texture. Coriander adds herbal brightness, while chilli brings warmth. The result is a complex, earthy sauce that pairs beautifully with grilled meats. Think of it as romesco's more adventurous cousin — familiar enough to feel approachable, but with deeper layers of spice and a heartier body from those ground nuts.
