When crackers vary in size, smaller ones overbake and burn while larger ones stay chewy, forcing you to choose between removing some early or accepting uneven results. Roll dough to consistent ⅛-inch (3mm) thickness between parchment sheets, using a ruler if needed for your first batch. Score into identical rectangles with a sharp knife or pizza cutter before baking—don't separate them yet, as they're easier to transfer as a sheet. The scored lines make clean breaking after baking. For crackers, the ⅛-inch target is your sweet spot: too thick and they stay chewy; too thin and they burn before crisping.
