The flesh of a citrus fruit delivers acidity and sweetness, but most of the aromatic flavor lives in the colored outer skin. The zest contains concentrated essential oils that carry the fragrance and flavor compounds that make lemon taste unmistakably of lemon. A fine microplane grater releases these oils without scraping the bitter white pith beneath. In cooking, adding zest to both the liquid and solid components of a dish creates a through-line of citrus aroma across every element on the plate.
