What Are Sunchokes?

Sunchokes, also known as Jerusalem artichokes, are the tubers of a North American sunflower plant and have nothing to do with Jerusalem artichokes. They have a light, nutty flavor often compared to water chestnuts or globe artichoke hearts, with a pleasant sweetness. Their thin skin means they do not need peeling, just a good scrub. Sunchokes can be roasted, pureed into soups, sliced raw into salads, or fried into chips. One important note: sunchokes contain a starch called inulin that the human body cannot fully digest, which can cause digestive discomfort for some people. Introducing them gradually into your diet helps avoid any issues.
