What is a Soubise Sauce

Soubise is a classic French sauce built on slow cooked onions, butter, and cream, pureed until silky smooth. Unlike a quick pan sauce, soubise rewards patience. The onions should be stewed gently without browning until completely tender and sweet, which can take up to an hour. The result is a velvety, mild sauce that carries richness without heaviness, ideal for spooning under roasted chicken, white fish, or lamb. The base is endlessly adaptable. Swap half the onion for leeks, fennel, or kohlrabi to shift the flavor, or finish with a squeeze of lemon to cut the cream and brighten the plate.
