What is Etouffée?
Étouffée is a thick, gravy-like stew that's made with a roux, flour, fat, and seasonings, and served over rice with shellfish, such as shrimp or crawfish. The word "étouffée" comes from the French word to smother, which describes the cooking method used in the Cajun and Creole areas of south Louisiana.
