What is seitan?

What is seitan?

Seitan (pronounced "say-tan") is a meat substitute made from wheat gluten, the main protein in wheat. It's created by washing wheat flour dough with water until all the starch dissolves, leaving behind just the gluten protein. When cooked, it has a chewy, meat-like texture that makes it popular in vegetarian and vegan cuisine.


Seitan originated in ancient China, where Buddhist monks developed it as a protein source. It's often called "wheat meat" or "vital wheat gluten" and can be flavored in many ways. When prepared properly, it can mimic the texture of chicken, beef, or pork.
