Ingredients
2 large organic carrots 2 shallots 2 oz pepitas (pumpkin seeds), toasted 2 tablespoons finely chopped cilantro 1 tablespoon concentrated carrot powder 1 cup boiling water 0.5 cups apple cider vinegar 1 teaspoon creamed horseradish sauce 1 cup extra-light olive oil 1 teaspoon salt 2 teaspoons sugar 1 inch root ginger, very finely grated
Method
First, make the dressing. Reconstitute the carrot powder by combining it with boiling water and beating well. Put in a blender.
Add the apple cider vinegar, horseradish and ginger and pulverize.
Slowly add the oil in a dribble, blending all the time.
Taste and add the salt and sugar until it tastes just how you like it.
For the slaw, peel and cut the carrots into the finest batons you can manage.
Use a mandolin on the peeled shallots and combine with the carrots.
Chop the cilantro really finely and toss with the carrots and add the toasted seeds.
Dress with the sauce.
