Cherry Extract substitutes well for Kirsch
Baker Rowan used Kirsch plentifully in his 'celebrity bust' of Marie Antionette. Prue Leith loved the flavor.
Kirsch can be hard to find in the US and, once found is very expensive. A good quality cherry extract, like the one at Dolce Foglia, is a much more affordable substitute that tastes exquisite.
