Linda's "Festive Revival" Cake
In her original series, when asked to make a pineapple upside down pudding, Linda was judged to have created a 'pineapple fritter' and so she was out to redeem herself for that.
Also, it was choux pastry that finally saw Linda leaving the tent, so she built choux into her redemption cake.
Linda made dainty choux pastry swans, a teeny-tiny pineapple upside down cake, a three tier chocolate, chilli and ginger cake ... all on top of a lemon cake filled with lemon curd.
