Paul Ainsworth: "The maitake mushrooms? Happy with how that's turned out?"

Liv: "I think I would have liked a bit more even color over the grilling of it and the barbecue."

Peers, talking behind the scenes

"Smoky mushrooms. Great."

"A lot of smoke on there. Yeah."

"For me, I love high seasoning."

"I think it's right on the edge, but I think it's okay."

Back in the tasting room

Paul Ainsworth: "And the pastry?"

Liv: "Yeah. Happy how the pastry came out."

 Paul Ainsworth: "And the beetroots?"

Liv: "Beetroots I was really happy with."

Paul Ainsworth: "Do you feel you've got the pickle into them?"

Liv: " Yes. Yeah.

Peers, talking behind the scenes

"Personally, I'd like to see something a bit more pickled on there."

"Agreed."

"Is the beetroot pickled?"

"I'm not getting the pickle."

Back in the tasting room

Paul Ainsworth: " If you were to score this dish, what would you give yourself?"

Liv: "I'd probably give myself an eight."

Final Judging

Paul Ainsworth: "Liv, for your dish. Justice for the 97, you have a really strong link to the brief, and I love your reimagining of scouse pie at the football. Your maitake mushrooms, that's a wonderful umami flavor, but they were just a bit dry. The pickled beetroots lack that acidity. They just didn't have long enough in that pickle. The tiny bit of vegan pastry was so delicious. You've called it a pie. I do think you need to introduce more of that pastry. Yeah, I really think you've got something here, but you've got to make some changes."
